Ingredients

Sunflower oil, for cooking

140g plain flour

4 eggs

200ml milk

Salt and black pepper

Directions

1 Preheat the oven to 220°C/200°C fan/gas mark 7.

2 Drizzle a little sunflower oil evenly into two four-hole Yorkshire pudding tins, or two 12- hole non-stick muffin tins. Place in the oven to heat through.

3 Place the flour in a large jug and beat in the eggs to form a smooth batten

4 Gradually add the milk and continue beating until completely lump-free. Season with salt and pepper.

5 Remove the hot tins from the oven. Carefully and evenly, pour the batter into the muffin tin holes.

6 Place the tins back in the oven and leave undisturbed for 20-25 minutes until the puddings have puffed up and browned resist the urge to open the oven and check on them!

7 Serve immediately with the roast beef.
