Apple Cinnamon Fruit Leather

3 - 4 cups of chopped apples
1/3 cup water
1-2 tablespoons maple syrup
1 teaspoon cinnamon
Directions
1. Wash and chop apples and blend into a puree in high powered blender
2. put apple puree in medium saucepan.
Add 1/3 cup water and bring to a simmer. Cover and cook about 10 minutes. this releases the pectin.
3. Add maple syrup and cinnamon. Cook 2-3 more minutes on low heat, stirring occasionally.
4. Pour onto a large baking sheet lined with a silicone baking mat (such as Silpat) and spread with a spatula into a thin layer. Bang the pan on the counter a few times to make sure the mixture is evenly distributed.
5. Bake at 170 degrees for 2-7 hours, checking every 20-30 minutes, until it's tacky but doesn't stick to your finger.
6. Allow it to cool, then cut into strips and roll up. Using beeswax paper or parchment paper. Keep in an airtight container.
