Ingredients

1 can (15 oz) chickpeas, drained and rinsed

½ cup cucumber, diced

½ cup cherry tomatoes, halved

¼ cup red onion, finely chopped

¼ cup Kalamata olives, sliced

¼ cup crumbled feta cheese

2 tbsp fresh parsley, chopped

1 tbsp olive oil

1 tbsp red wine vinegar or lemon juice

Salt and pepper to taste

Directions

1. In a bowl, combine chickpeas, cucumber, tomatoes, onion, olives, feta, and parsley.

2. Drizzle with olive oil and vinegar/lemon juice, season with salt and pepper, and toss gently.

3. Chill until serving for best flavor.
