Split Pea Soup with Ham

Ingredients

1/4 cup Unsalted Butter

2 cups Onion, Chopped

1 cup Carrots, Diced (2 carrots)

1 cup Celery, Diced (3 stalks)

1 teaspoon Salt

1/2 teaspoon Pepper

2 cloves Garlic, Minced

1 Lb Dried Split Peas

3 smoked Ham Hocks

1 Bay leaf

2 teaspoons Fresh Thyme Leaves, Chopped

6 cups Chicken Stock

2 cups Water

1 1/2 cups Diced Ham

Directions

1. In a large pot melt butter until foaming subsides. Add onion, carrot, celery, salt and pepper. Cook until vegetables are soft and just beginning to brown, 5-8 minutes. Add garlic and cook 1 minute. Stir in split peas.

2. Add ham hocks, bay leaf and fresh thyme. Stir in chicken stock and water. Bring to a boil and reduce to a simmer uncovered for60-90 minutes. Stir occasionally, until split peas are cooked completely and soup is thickened to desired consistency. Stir more often as soup begins to thicken and add a little stock if it gets to thick for your tastes.

3. Add diced ham during the last 15 minutes of cooking. When ready to serve remove ham hocks, strip meat off and add meat back to soup. Remove bay leaf. Salt and pepper to taste and serve.
