Chilli Peanut Noodles

Ingredients

Ingredients for *ONE PORTION*

70g of uncooked rice noodles

110g of chicken breast, raw

2 tbsp of light soy sauce

1/2 spring onion

Chili flakes

12g of peanut butter

1 tbsp of hoisin

1/2 a stock cube in half a cup of boiling water (so it’s dissolved)

Paprika

1/2 tsp of siriacha

Directions

slice your chicken into small pieces and add paprika and 1 tsp of light soy sauce

Fry on a low heat for 8-10 minutes until golden brown

Cook the rice noodles for a couple of minutes / as according to the packet

Add the peanut butter, hoisin, stock, 1 pinch of chilli flakes, the rest of the soy sauce and hoisin to a bowl

Drain the noodles and add the sauce, noodles and chicken.

Slice the spring onions and put it on top with the chilli flakes
