Ingredients (Makes 5 Servings)
Honey Butter Steak Bites
1000g Raw Tenderloin Steaks, cut into cubes
2 Tsp Salt
2 ½ Tsp Black Pepper
2 Tsp Parsley
1 ½ Tsp Chili flakes
2 Tsp Paprika
2 ½ Tsp Garlic Powder
3 Tsp Olive Oil
30g Light Butter (for cooking)
30g Honey
2 Tbsp Fresh Parsley, finely chopped
Creamy Tuscan Potatoes
1000g White Potatoes, cubed
1 ½ Tsp Salt
2 Tsp Garlic Powder
2 Tsp Paprika
3 Tsp Mixed Herbs
3 Tsp Olive Oil or Cooking Spray
120g Sundried Tomatoes, drained and chopped
1 Tsp Salt
1 Tsp Mixed Herbs
300ml Light Evaporated or Skimmed Milk
180g Light Cream Cheese
1 ½ Tsp Dijon Mustard
2 Tbsp Parsley
Directions
Cook seasoned potatoes in oven or air fryer for 20-22 mins at 200C/400F. You may need to cook longer in the oven, about 25-28 mins
Cook steak bites in light butter on medium heat for 3-4 mins each side. You want a deep brown crust. Repeat to cook all batches then set aside
Same pan in low heat, add sundried tomatoes with seasoning. Mix for 1 min then add milk, cream cheese, mustard and parsley. Stir continuously until rich and creamy
Drop your crispy potatoes, fold them in gently until fully combined and creamy
