Tori’s Crinkle Sugar Matcha Cookies

FOR THE COOKIES
185g Flour
3/4 teaspoon baking powder
3 tablespoons Matcha powder
1 1/2 tablespoons Almond Extract (can sub in vanilla extract)
113g ROOM TEMP unsalted butter
A little less than 1 tablespoon peanut butter
150g white sugar
1/2 teaspoon salt
50g brown sugar (optionally, if want cookies with more crinkly texture used powdered sugar over brown sugar)
1 large egg + 1 egg yolk (2 eggs total)
Directions
MIX DRY INGREDIENTS
In 1 bowl mix flour and baking soda
MIX WET INGREDIENTS
In another bowl mix matcha & almond extract into a paste.
Then add butter and mix until smooth.
Then add peanut butters, sugars, and salt.
Beat until light green & fluffy.
Beat in egg + egg yolk until smooth
COMBINE MIXTURES
Add the flour to the wet mixture. Fold to combine. Refrigerate while oven preheats.
Preheat oven to 355° F
Line baking sheet with parchment paper
Once oven is preheated, take out dough and roughly make into 2 tablespoon balls
Optional: roll cookie dough balls in powdered sugar before baking
Bake until they look dry on top, about 12 minutes.
