Ingredients

2 chicken breasts

4 roma tomatoes, chopped

1 onion diced

2 cloves garlic diced

2 chipotle chilis

1 teaspoon salt

1 teaspoon dried oregano leaves

1/2 teaspoon ground cumin

1 Tablespoon adobo sauce (from the can of chilis)

Chicken broth (optional, if needed)

Directions

Roast or boil chicken , shred, set aside

Saute onions in oil in a large pan on medium heat until they start to brown

Add cumin, oregano, garlic, salt, saute a couple mins until fragrant

Add tomatoes, saute until they soften

Add chipotles and adobo, saute a couple mins

Put in blender, blend lightly to preserve some texture

Add back to pan with chicken, on low heat, stir well to combine

Cook for a few mins until sauce is nicely absorbed into chicken. While cooking, add a small amount (1/4 C at a time) chicken broth if it seems too dry
