Rolling Up Something Savory Today

300g all purpose flour @kingarthurbaking
3g instant dry yeast
110g milk
25g heavy cream
One egg
30g soft butter
25g sugar
6g salt
Filling: honey, smoked ham and a few slices of turkey bacon.
Process:
In the bowl of a stand mixer, add flour, dry yeast, egg, milk, heavy cream, salt, and sugar. Mix for 4 or 5 minutes until the dough comes together.
Continue mixing and add butter in 2 or 3 batches. Mix until a soft and elastic dough forms, which should take between 8 to 10 minutes or more. Check for the ‘windowpane’ effect. If the dough still breaks, let it rest for 10 to 15 minutes and then test it again.
Form the dough into one ball and let it rest for 2 or 3 hours.
Lightly spray your work surface with water or oil. Degass and roll out the dough into an even rectangle. (I used the baking pan as a guide)
Brush the dough with honey and add the ham, covering 3/4 of the dough surface. Roll up the dough like a log.
Cut rolls in any amount of pieces you want. (See video).
Transfer the rolls to a oiled baking pan 9x5inch and cover. Let proof for 2-3 hours until puffy.
Brush with egg wash before baking. Bake at 350°F for 35- 40 minutes. After the first 25 minutes, cover with foil to avoid burning.
