Crockpot Parmesan Garlic Chicken & Potatoes Are an Easy Week

1 lb chicken breasts
1 bag baby potatoes, quartered (or 4-5 russet potatoes cut into cubes)
olive oil + salt, pepper, garlic powder, smoked paprika (for potatoes)
1/2 tsp each of salt and pepper
1 tsp each of paprika, onion powder, and Italian seasoning
1 tbsp minced garlic
Buffalo Wild Wings Parmesan Garlic Sauce (just enough to cover chicken)
1 cup of shredded mozzarella cheese
Dried parsley
Parmesan cheese
Directions
Quarter one bag of baby potatoes and cut chicken into cubes. Spray a crockpot with cooking spray.
Add potatoes the crockpot. Season with olive oil, salt, pepper, garlic powder, and smoked paprika (I don’t use exact measurements for this part).
Add minced garlic and stir potatoes and seasonings well.
Add the chicken on top of the potatoes. Season chicken with 1/2 tsp each of salt and pepper, 1 tsp each of smoked paprika, onion powder, and Italian seasoning.
Add some garlic Parmesan sauce. I use just enough of the sauce to cover the chicken. You can always add more sauce if needed once everything is cooked.
Cook on low for about 6 hours or until potatoes are cooked to your liking. Stir everything well.
Top with shredded mozzarella cheese and let it sit just until the cheese is melted.
Top with some dried parsley and Parmesan cheese. Enjoy!
