Jalapeno Bacon Jam

1 pound thick-cut bacon, (diced)
1 large yellow onion, (finely diced, about 1 ½ cups)
3 medium jalapeno peppers, (seeded* and diced, about 1 cup)
2 teaspoons garlic, (minced)
½ cup (100 g) light brown sugar, (packed)
⅓ cup (80 g) apple cider vinegar
¼ cup (79 g) maple syrup
1 teaspoon chili powder
Directions
Cook bacon.
In a medium skillet over medium heat, cook bacon until crispy. While the bacon is cooking, line a plate with a paper towel.
Place bacon on paper towel-lined plate.
Once the bacon is done, place onto the lined plate. Set aside.
Leave bacon grease in the pan.
Leave about ¼ cup of bacon grease in the pan, carefully removing the rest.
Cook onion and jalapenos.
To the pan, add the onion and jalapenos. Reduce the heat to medium-low. Cook until the onions are caramelized, 15-20 minutes, stirring often.
Mix garlic, brown sugar, maple syrup, apple cider, vinagar, chili powder, and bacon.
Mix in the garlic, brown sugar, apple cider vinegar, maple syrup, chili powder, and bacon.
Simmer.
Allow the mixture to simmer for 7-10 minutes, or until it thickens to the consistency of jam.
Serve warm or cold. You may want to warm slightly if it has been refrigerated.
