Ingredients

Cozy Potato Soup (Crock Pot)

Ingredients

2–2½ lbs potatoes, peeled and chopped

1 medium onion, diced

2–3 cloves garlic, minced

4 cups vegetable stock (add more if needed)

4–6 slices bacon (optional)

2 tbsp butter or reserved bacon fat

Salt, to taste

A little smoked paprika

A little white pepper

Black pepper, to taste

½–1 cup half and half

1–1½ cups shredded cheese (agged cheddar, sharp cheddar, and something fancy with umami flavor)

Optional

1 bay leaf or a pinch of thyme

Green onions or chives for topping

Directions

Instructions

1. Cook bacon (optional)

Cook until crisp. Set aside and crumble. Reserve 1–2 tbsp bacon fat.

2. Add to crock pot

Potatoes

Onion

Garlic

Vegetable stock (just enough to cover)

Butter or bacon fat

Pinch of salt

Black pepper

Optional bay leaf or thyme

3. Cook

LOW: 6–7 hours

HIGH: 3–4 hours

Potatoes should be very soft.

4. Mash or blend

Remove bay leaf.

Mash or partially blend.

Do not fully puree.

5. Finish (last 20–30 minutes)

Stir in sour cream

Stir in cheese

Add bacon (or reserve for topping)

Adjust salt and pepper

6. Serve

Top with cheese, bacon, green onions, and black pepper

Serve with bread
