Chinese Style Fried Noodles

1–2 tbsp vegetable oil for frying
1 bunch spring onions
250g bean sprouts
250g medium dried egg noodles (I used @bluedragon)
2 tbsp sesame oil
Sauce Ingredients:
1 chicken stock cube
3 tbsp dark soy sauce
1/2 tsp salt
1/2 tsp sugar
1/2 tsp white pepper
200ml boiling water
Directions
Prepare the sauce by combining the chicken stock cube, salt, sugar, white pepper, and boiling water in a bowl, stirring until dissolved, then add the soy sauce. Heat the vegetable oil in a pan and sauté the spring onions, starting with the white ends, then add the bean sprouts, followed by the green ends of the spring onions. Now add the sesame oil. Rehydrate the noodles according to the packet’s instructions, add them to the pan, and mix in the sauce. Toss everything well to coat the noodles in the sauce, then cook for about 5 minutes until the noodles absorb the flavors and the liquid evaporates. Serve and enjoy your takeout-style fried noodles!
