Josh chilli garlic noodles

220g beef mince
1 pack Taiwanese sliced noodles
1 green onion
5 garlic cloves, minced
small knob of ginger
1 bok choy
3 tbps gochugaru
1 tbps brown sugar
2 tbps soy sauce
2 tbps cracked pepper
neutral oil
Directions
1. Prepare the gochugaru mix: add gochugaru, brown sugar, soy sauce, cracked pepper to a bowl/vessel.
2. Cut bok choy into quarters.
3. Start to boil water for noodles and put the wok on high heat.
4. Once water starts boiling, add noodles and cook for a short duration (e.g. 2 minutes). They should still be stiff and somewhat uncooked when you take them out. Run under cold water and set them aside to prevent them cooking further.
5. Smash and roughly chop the garlic. Grate the ginger. Add these to the wok alongside the oil and cook for roughly one minute.
6. Add the mince to the wok, saute for 3 minutes.
7. Add the bok choy and (semi-cooked) noodles. After 3 minutes, stir in the gochugaru sauce and continue cooking for 2 minutes.
8. Serve!
