Banana Bread Cake with Cream Cheese Frosting

For the Banana Bread Cake:
1 ½ cups mashed ripe bananas (about 3–4 bananas)
2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, softened
1 cup granulated sugar
½ cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
½ cup buttermilk (or ½ cup milk + 1 tbsp lemon juice or vinegar)
For the Cream Cheese Frosting:
8 oz cream cheese, softened
½ cup unsalted butter, softened
3–4 cups powdered sugar (adjust to taste)
Directions
Preheat oven to 350°F (175°C). Grease a 9x13-inch pan or line with parchment.
In a bowl, whisk together flour, baking soda, and salt.
In a large bowl, cream butter with both sugars until fluffy. Add eggs and vanilla; beat well.
Stir in mashed bananas and buttermilk until combined.
Gradually mix in the dry ingredients until just incorporated.
Pour batter into the prepared pan and smooth the top.
Bake for 30–35 minutes or until a toothpick comes out clean.
Cool completely before frosting.
For the Frosting:
Beat cream cheese and butter until smooth.
Gradually add powdered sugar, beating until creamy and spreadable.
Spread over cooled cake and top with banana slices if desired.
