Rochelle’s Chicken Salad Recipe

Ingredients

5 C Cooked Chicken

3/4 C Celery, cut the same size as the half mandarin oranges and celery

1/2 C Green Onions, finely chopped

2 small cans mandarin oranges, cut in half

1 Can Pineapple, drained

2 C Red Grapes, cut in half

1 C Cooked Rice

1/2 C Slivered Toasted Almonds

1/2 C Mayo

1/2 C Sour Cream

1 Tablespoon Lemon Juice

Slat and Pepper to taste

Directions

I doubled the grapes and mandarin oranges already in the recipe as per Rochelle’s suggestion. (I double the grapes and mandarin oranges). You will need to add salt and pepper  to taste. I use the canned chicken from Sam's or Costco... You will drain a large can of crushed pineapple but don't press it to remove all fluid, just drain...the salad needs moisture.

I believe with small croissants Kaitlyn and Rob could have done 90 with large 40.
