Simple Chickpea & Edamame Bowl

Ingredients

1 onion

3 cloves garlic

1 small chunk of ginger

½ teaspoon ground turmeric

1 teaspoon ground cumin

1 x 14 oz tin chickpeas

3 ½ oz frozen edamame beans

3 ½ oz spinach

4 tablespoons coconut yoghurt

1 lemon

2 tablespoons tahini

drizzle of olive oil

pinch of sea salt & black pepper

Directions

  1. Warm a large sauté pan over medium heat and add a drizzle of olive oil. Add the onion, garlic, ginger and a pinch of salt. Cook for 10 minutes until softened.

  2. Add the turmeric and cumin, cook for 1 minute.

  3. Stir in the chickpeas, edamame beans, spinach, coconut yoghurt, lemon juice and tahini. Simmer for 5 minutes, stirring often, until the edamame beans are tender. Season to taste.

  4. Serve with rice.
