Crushed feta Brussels

Ingredients

Brussels sprouts (tough bottom stem ends trimmed)

2 tablespoons extra virgin olive oil

1 teaspoon kosher salt

3/4 teaspoon ground black pepper

2 tablespoons balsamic vinegar

Garlic powder

1/3 cup crumbled feta cheese

Whipped Dijon hummus dip

1/4 cup garlic hummus

3 tbsp Dijon mustard

2 tbsp warm honey

Enough water to thin

Directions

Cut off bottoms of brussel sprouts and steam in microwave for 4-5 minutes until soft but not mushy.

Place a rack in the center of your oven and preheat the oven to 425 degrees F. For easy clean-up, line a large, rimmed baking sheet with parchment paper. Place the Brussels sprouts in the center of the pan and top with olive oil and smash brussels with back of a spoon.

Toss on feta, sea salt, garlic powder, and balsamic vinegar.

Bake for 25 minutes, then remove the pan from the oven.

Add the dip ingredients to a bowl and whisk until smooth.
