Ingredients

Spaghetti with Garlic & Oil

A few ingredients, handled the right way this is one of my favorite dishes.

You’ll need-

1-lb spaghetti

1/3-cup extra virgin olive oil

8-garlic cloves, thinly sliced

1/2-tsp crushed red pepper

1-tsp salt

1/4-cup chopped parsley

Directions

Let the garlic lead. Start with a cold pan oil, garlic, red pepper.

2-Bring it up slowly on low heat for 4–5 minutes. You’re not rushing this… you’re building flavor.

3-A small step that changes everything, take it off the heat and add 2 tbsp water. It stops the garlic right where you want it and quietly starts your sauce.

4-Cook the pasta just shy about 2 minutes under

5-Bring it together add 1/2 cup pasta water to the pan, medium heat.

6-Transfer the pasta from the water to the pan and toss for 2 minutes. You’ll see it happen the oil and water come together into something smooth and glossy.

Add a little more water if it needs it.

6-Finish with the parsley toss and serve.

Simple ingredients. Proper technique. That’s the difference.
