Ingredients

1 1/2 cups shredded zucchini (2 small)

1 1/2 cups old fashioned oats

1/2 cup whole wheat flour (or additional oats)

2 tablespoons shelled hemp seeds (optional)

1/2 cup pitted Medjool dates

1/4 cup pure maple syrup

1 stick (8 tablespoons) salted butter, melted

2 eggs

1 tablespoon vanilla extract

1 1/2 teaspoons baking soda

1 teaspoon sea salt

1 cup dark chocolate chips

Directions

1. Preheat the oven to 350°F. Line 14 muffin tins with paper liners.2. In a blender, combine all ingredients, except the chocolate. After blending, mix in the chocolate chips.3. Divide the batter among muffin tins. Bake for 18-22 minutes, until just set. Add flaked sea salt, if desired. Enjoy!
