Zucchini Ravioli

Ingredients

1 zucchini

200g feta cheese

100g pesto

150g tomato sauce

Grated or powdered Parmesan

Extra virgin olive oil

Fresh basil leaves

Directions

Wash and slice the zucchini into thin strips.

Pat them dry with paper towels to remove excess moisture.

In a bowl, mix the crumbled feta cheese with the pesto.

Cross two zucchini strips to form a “+” shape, add a spoonful of filling in the center, and fold the ends to close the ravioli.

In an oven-safe dish, spread the tomato sauce as a base and place all the ravioli on top.

Drizzle with extra virgin olive oil and sprinkle with Parmesan.

Bake at 180°C (350°F) for 15 minutes.
