1 1/2 cups rolled oats
1/2 cup almond butter (or peanut butter)
1/4 cup honey or maple syrup
1 tsp vanilla extract
1 tsp pumpkin pie spice (or 1/2 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp nutmeg, 1/8 tsp cloves)
1/4 cup mini chocolate chips or dried cranberries (optional)
2 tbsp chia seeds or ground flaxseed (optional for added nutrition)
Pinch of salt

Instructions:
Combine Wet Ingredients: In a large bowl, mix together the pumpkin purée, almond butter, honey or maple syrup, and vanilla extract until smooth.
Add Dry Ingredients: Stir in the oats, pumpkin pie spice, salt, chia seeds or flaxseed (if using), and chocolate chips or dried cranberries.
Chill the Mixture: Refrigerate the mixture for about 30 minutes, so it's easier to handle. Roll into Bites: Once chilled, scoop out small portions of the mixture and roll them into bite-sized balls. Store: Store the bites in an airtight container in the fridge for up to a week or freeze for longer storage.
