Baked Rice Custard

Ingredients

1/3 cup regular raw rice

4 cups milk

1 tsp. salt

3 eggs

3/4 cup sugar

1 1/2 tsp. vanilla

Directions

In top of double boiler combine rice, milk and salt. Cook over boiling water, stirring occasionally for 1 hour.

Grease 2 quart casserole. Place in baking pan with 1 inch of water.

Beat eggs, sugar, and vanilla until blended. Add this to the rice mixture and pour into casserole. Bake at 350 for 50 - 60 minutes. Nutmeg or cinnamon may be sprinkled over rice before baking.
