1. preheat oven to 160 degrees Celsius and an oven proof pan on a hot plate for medium high heat

2. score the fat cap in a cross hatch pattern

3. apply salt and pepper to the meat

4. put the meat in the pan for about 5 minutes on each side alongside olive oil

5. put the meat in the oven for about 30 minutes or until the meat reaches 50 degrees Celsius in the middle

6. let it rest for 15 minutes before slicing
