Caramel Apple Overnight Oats

for the caramel:
12 pitted dates
1/4-1/2 c of almond milk
1/2 tsp vanilla extract
pinch of sea salt
for the apples:
2 apples diced
1 tbsp maple syrup
cinnamon
sea salt
for each jar:
1/3 c oats
1 tbsp chia seeds
1/4 tsp applie pie spice
1/4 tsp cinnamon
pinch of sea salt
1 scoop of vanilla protein powder
1 tsbp collagen peptides
1/3 c of almond milk
optional toppings:
nuts (walnuts or pecans)
flax seeds
Directions
In a sauce pan, bring water to a boil and remove from heat. Add dates and let soak for 10 minutes
Add dates, 1/4 almond milk, vanilla extract & salt to a blender. Add more almond milk 1 tbsp at a time if neededuntil caramel is smooth
Add caramel into an airtight container and store in fridge
In a sauce pan, add diced apples, maple syrup, cinnamon and salt. Cook on medium heat stirring occaisionally for 8-10 minutes
In each jar, add oats, chia seeds, apple pie spice, cinnamon, salt, protein powder, collagen peptides and almond milk and mix well
Top will apples and store in fridge overnight
In the morning, top with caramel and nuts/seeds if desired
