Ingredients

1 2/3 cup Dark Chocolate

1/2 cup butter

4 Eggs

0.65 cup Sugar

3 1/2 tbsp Flour

Powdered sugar to taste

Directions

  • Melt the chocolate.

  • When the chocolate has melted, but is not too hot, add the chopped butter and let it melt while continuing to stir. (If the chocolate is too hot, the butter will separate) Let the chocolate and butter mixture cool, stirring occasionally.

  • Separate the yolks from the egg whites in two separate large bowls.

  • Add a pinch of salt to the egg whites and begin beating them at a moderate speed. Once you have soft peaks, begin slowly adding half of the sugar. Once you have stiff peaks, set aside.

  • Pour the remaining sugar into the yolks and beat them at a moderate speed until you obtain a clear, frothy mixture.

  • While continuing to blend, pour in the lukewarm chocolate and butter mixture and keep mixing until a uniform texture is obtained.

  • Using a spatula, slowly add the stiff egg whites and the flour, gently stirring from the bottom up until smooth and uniform.

  • Grease 9-inch springform cake pan (this will make it easier to remove the soft cake), and bake for 30-35 minutes.

  • Let cake cool before removing it from the pan and sprinkling with powdered sugar.
