Tuscan White Bean Skillet

Ingredients

1 tbs olive oil

1/4 cup chopped onion

3 cloves garlic, minced

1 cup marinated artichoke hearts, drained

1/2 cup sun-dried tomatoes, chopped

1 teaspoon dried oregano

1/2 tsp kosher salt

1/4 tsp black pepper

1 - 15oz can cannellini beans, drained

1/4 cup white wine

3 cups chopped kale

1/2 cup heavy cream

1/3 cup fresh Parmesan cheese, grated

2 tbs fresh basil, thinly sliced

Directions

Add oil to skillet over medium heat. Sauté onions until translucent. Add garlic. Sauté an additional 3 minutes. Add artichokes and tomatoes. Season with oregano, salt, and pepper. Deglaze with white wine, add beans and kale. Sautee for 5 minutes. Stir in heavy cream. Finish with Parmesan and fresh basil. #recipe #cancer #fyp
