Chipotle Chicken Salad Meal Prep

Ingredients

Creamy Chipotle Dressing:

300g Cottage Cheese

150g Greek Yogurt

150g @gmgsalsa Salsa

1 Chipotle Pepper + 2 Tbs Adobo Sauce

1 Tbs Taco Seasoning

1 tsp Garlic Powder

1-2 tsp Salt

Chipotle Chicken:

1 lb Chicken Thighs

2 Tbs Adobo Sauce

1 tsp Garlic Powder

2 tsp Smoked Paprika

2 tsp Salt

Layer In Each Jar:

1/4 Creamy Chipotle Dressing

3oz Cooked Chicken Thighs

100g Black Beans

60g Roasted Corn

50g Pico de Gallo

Salad Mix / Romaine Lettuce

RECIPE

Directions

Add all dressing ingredients except salsa to a blender and blend until completely smooth. Add salsa to dressing and mix with a spoon.

Toss chicken thighs with adobo sauce and seasonings. Cook in a pan over medium-high heat for 6–8 minutes per side until cooked through. Let cool and chop.

Layer the ingredients into jars in the exact order listed above (dressing on the bottom keeps the greens crisp).

Store in the fridge. Shake well to mix before eating!
