Korean BBQ Fried Rice

1 ½ cups x Long Grain White Rice (uncooked)
2 ½ cups x Chicken Stock
2 x Chicken Thigh Fillets (diced)
200g x Edamame Beans
2 x Spring Onion Sprigs (sliced)
2 tbsp x @Mingle Seasoning Korean BBQ Seasoning
2 tbsp x Soy Sauce
2 tbsp x Mirin
3 x Eggs
To Serve
Spring Onion (extra)
Mingle Everything Bagel Seasoning
Mayonnaise
Chilli Oil
Directions
Preheat oven to 200°C (fan). Add chicken, soy sauce, mirin, Korean BBQ seasoning, chicken stock, rice, edamame, and spring onion, to a baking dish. Stir to combine.
Cover tightly with foil and bake for 30-40 minutes.
Remove from oven, stir, then make 3 small wells and crack in the eggs. Bake uncovered for a further 8-10 minutes or until eggs are cooked to your liking.
With a fork fluff the rice and break the egg into little pieces, stirring it all through.
Serve with top with extra spring onion, everything bagel seasoning, a drizzle of mayo, and chilli oil.
