Easy One Pan Chicken & Spinach Orzo

450g chicken breasts, cut into 1 inch cubes
Salt and pepper, to taste
1 tbsp paprika
2 tbsp olive oil
1 shallot, diced
2 cloves garlic, minced
1 cup orzo, dry
2 cups chicken broth
¼ cup parmesan cheese, grated
¼ cup heavy cream
2 large handfuls fresh spinach
Directions
Season chicken with a generous pinch of salt and pepper and the paprika.
Heat olive oil in a large skillet over medium. Add the chicken and stir occasionally until the outside of the chicken pieces begin to cook.
Add the shallot and garlic. Stir occasionally until fragrant (2 to 3 minutes).
Add the orzo and stir until each piece is coated in oil. Add the chicken broth and bring to a gentle boil.
Reduce heat to low, give the orzo a stir, and cover for 15 minutes or until most of the liquid is absorbed.
Add the parmesan cheese, cream and spinach. Stir until the spinach has wilted and the orzo is creamy throughout.
Taste the orzo and season with more salt and pepper if needed. Serve and enjoy!
