Speedy glazed salmon

Ingredients

2tbsp soy sauce

3tbsp lime juice

2tbsp runny honey

4 salmon fillets

100g shiitake mushrooms, sliced

200g sugar snap peas

2 heads of pak Choi, halved

2 x 250g packs of microwaveable brown basmati rice, cooked

1tbsp sesame seeds

Directions

1 Heat a non-stick frying pan to medium. Mix the soy, lime juice and honey, and pour over the salmon. Leave to marinate or cook straight away in the pan, basting with the sauce. Turn the fillets over after 5mins and keep basting until cooked. Add the mushrooms when you turn the fish.

2 Put the peas and pak choi in a bowl with 3tbsp water, cover with clingfilm and cook in the microwave on high for 3mins. Sprinkle the salmon with sesame seeds and serve with the veg and rice.
