Watermelon Feta Salad with a Zesty Lime Vinaigrette

Ingredients

For the Salad-

4 cups watermelon, cubed into bite size pieces

1/2 cup Feta, crumbled

1 tbsp fresh mint leaves, torn

1 shallot, finely minced

Flaky Salt

Black pepper

For the Lime Vinaigrette-

Zest of 1 lime

Juice of 2 limes (about 2-3 tbsp)

1 tbsp good extra virgin olive oil

1 tsp honey

Pinch of red pepper flakes

Big pinch kosher salt

Directions

First, make the vinaigrette by whisking together all the ingredients listed. Then, taste and adjust to your liking! Add more lime if needed, more honey, more salt, etc.

Assemble the salad by placing watermelon cubes in a shallow serving dish, with crumbled feta, minced shallot and torn mint leaves. Drizzle vinaigrette over the top, season with flaky salt + pepper- and enjoy! Easy peasy. 🍉🌿
