Fried Vinha D’Albos (Pickled Pork)

Ingredients

4 1/2 lbs Pork Butt

1 cup Apple Cider Vinegar

1 cup Distilled White Vinegar

2 tsp Lemon Juice

5 tsp Hawaiian Salt

5 Hawaiian Chili Peppers

15 cloves Crushed Garlic

1 1/2 tsp Paprika

1/8 tsp Ground Cumin

1/8 tsp Ground Cloves

1/8 tsp Allspice

1/8 tsp MSG

Directions

Cut pork into 1 1/2” cubes

Place the pork in a Ziplock baggy

Make the marinade

Pour over pork and marinate in the refrigerator for 8 hours or more

Put all contents into sauce pan

Cover and cook for 15 minutes on medium heat

Drain sauce

Cook pork for about 30 minutes longer with the cover partially open until meat is slightly crispy
