Grandma Marilyn’s Meat croquettes (use Leftover Roast)

Thick white sauce ingredients:
4 tbsp butter
4 tbsp flour
1/4 tsp salt
1/8 tsp pepper
1 cup milk
Remaining ingredients:
1 tsp minced onions
1 tsp minced parsley
Can add finely chopped celery if desired.
2 cups of chopped roast beef
Directions
Combine ingredient for white sauce
Add in remaining ingredients and mix then chill
Once the mixture is firm, shape into cylinders of equal size (about 3 inches wide) and roll each in fine dry breadcrumbs. Let dry for 2 to 3 hours in refrigerator
Prepare a mixture of 1 egg beaten and 2 tbsp of water. Dip each cylinder and agin roll in fine dry breadcrumbs. Let dry again for at least 30 minutes
Fry in 400F hot deep oil until delicately browned. (about 2 min) remove and drain on an absorbent paper or drip rack.
Keep warm in the oven until served.
Notes
Optional: can be served with mushroom, tomato or any other sauce
