Cinnamon “Donut” Bread
Directions
Preheat oven to 350F
2 c. Flour
3/4 c. Sugar
1 tsp. Bkng powder
1/2 tsp. Bkng soda
1/2 tsp. Salt
Nutmeg - a generous sprinkle
Mix all of the above ingredients in a large bowl.
1 c. Buttermilk (OR 1 Tbls white vinegar and add milk to the 1 c. line - allow to sit for 5 min.)
1/4 c. Melted butter
2 eggs
2 tsp. Vanilla
Mix all wet ingredients together, and add them to the dry ingredients. Mix gently until just combined.
1/2 c. Brown sugar
2 tsp. Cinnamon
Mix in a separate bowl.
In a greased 9x5 loaf pan, spread half the batter, followed by half the brown sugar/cinnamon mixture (sprinkled evenly). Then add the rest of the batter and gently smooth, followed by the rest of the cinnamon sugar mixture. With a butter knife, gently swirl the batter.
Bake approx 50-60 min or until a toothpick inserted in the middle comes out clean or with just a few crumbs on it (shouldn’t be wet/doughy). Allow to rest in the pan at least ten minutes before running a knife around the edges to remove.
