Ingredients

Oil

Two spoon mustard seeds

Three spoons peanuts (can be replaced with cashews)

One spoon Chana dal (crunchy lentil that’s added as garnish to a lot of South Indian rice dishes)

Green chilies

Curry leaves

Cilantro

Rice

Lemons

Turmeric

Salt to taste

Asafoetida (this is used in Indian food and can be skipped; it adds a great flavor when cooked in oil but usually only used in recipes where we don’t use garlic)

Directions

heat oil in a heavy bottom pan on medium heat

Add Chana dal and peanuts once they are roasting, add green chilies, add mustard seeds and they will start to splutter

Add asafoetida if using and curry leaves

Add turmeric and chopped cilantro leaves

Turn the heat off

Add rice and lemon rice

Sprinkle salt to taste

Mix and adjust lemon juice until the rice is perfectly lemony and spicy.
