Zucchini Bread

Ingredients

4 eggs

1 cup sugar

1 cup vegetable oil

1-2 tsp cinnamon (per preference)

1/2 tsp allspice

1 & 1/2 tsp vanilla

1 tsp salt

1 & 1/2 tsp baking soda

3/4 tsp baking powder

3-4 cups grated zucchini

3 cups flour

1/2 to 1 cup chopped walnuts (optional)

1/2 to 3/4 cup golden raisins (optional)

Directions

Prepare 2 loaf pans with crisco and lightly flour

In mixer bowl: Beat eggs

Add sugar; mix well

Add oil; mix well

Add vanilla

Mix dry ingredients in separate bowl

Alternate adding the grated zucchini and the dry ingredients, mixing until incorporated

Bake at 350 degrees for 45-55 minutes until toothpick in center tests clean

Notes

If zucchini was grated and then frozen, it will thaw with a significant volume of liquid. Use all the grated zucchini and at least 3/4 of the liquid. Batter will be runnier, but needs this liquid to bake a moist loaf.
