Carrot Ginger Dressing

1 c. vegetable oil
1/3 c. rice wine vinegar
2 carrots, roughly chopped
3 green onions, white part only, sliced
2 tbsp. minced ginger
2 tbsp. soy sauce
1 tbsp. honey
kosher salt
Freshly ground black pepper
1 c. white rice
1 1/2 c. Shredded chicken
1 avocado, sliced
1 c. baby spinach
Directions
In a food processor or blender, combine vegetable oil, rice wine vinegar, carrots, green onions, ginger, soy sauce and honey. Blend until smooth and season with salt and pepper.
To make rice bowls, cook rice according to package instructions. Divide between 4 serving bowls, then top each bowl with shredded chicken, avocado, baby spinach and dressing.
