Mexican Beef 'N Rice Skillet

1 tbsp extra-virgin olive oil
1 lb taco beef
1 cup Mexican rice
1/2 - 3/4 (15-oz) can fire-roasted tomatoes (optional)
1/2 - 3/4 (15-oz) can black beans, rinsed and drained
3/4 can of corn
1 tbsp taco seasoning
2 cups cheese (Mexican blend or similar)
Fresh cilantro, for garnish
Directions
1. Cook taco beef
2. Cook Mexican rice
3. Once taco meat is cooked, add black beans, corn, and fire-roasted tomatoes (optional). Season with taco seasoning and stir to combine
4. Let simmer while rice finished cooking, then add rice and stir to combine
5. Add about half of cheese and stir to combine
6. Top with remaining cheese and cover to let melt, 2 to 3 minutes
5. Garnish with cilantro and serve
One Skillet Variation
1. Once beef is cooked, push beef to one side of skillet. Add a dash of oil and fry rice for about 2 minutes.
2. Add ingredients for Mexican rice (broth, spices, tomato sauce)
3. Add beans and corn and simmer until rice is cooked, about 20 minutes
4. Add cheese and garnish as directed above
