Ingredients

Package artichoke bottoms

4 salmon fillets

1 package arugula

1/2 package mushrooms

1 bushel asparagus

Lemon

Butter

Garlic

Brown sugar

Garlic powder

Onion powder

Salt

Thyme

Ground ginger

Paprika

Rosemary

Olive oil

Red wine vinegar

Balsamic vinegar

Lemon juice

Honey

Sugar

Directions

Prepare a pan with foil and oil. Place salmon fillets then cover with 2 tsp brown sugar, 2 tsp paprika, 1 tsp garlic powder, 1/2 tsp each salt, onion powder, ground ginger, cumin, dried thyme.

Roast in the oven at 375 for 14 minutes.

While cooking, make salad dressing with olive oil, balsalmic vinegar, red wine vinegar, lemon juice, honey, sugar, and salt. Toss with arugala.

In a skillet put 3/4 stick of butter and 2 cloves garlic. Once melted, saute artichoke bottoms, turning every few minutes. Fill with some of the butter mixture and Parmesan cheese then cover on low.

Slice asparagus in thirds then mix with chopped mushrooms. Toss in olive oil, salt, pepper, garlic powder, onion powder, thyme, and rosemary. Roast in oven for 13 min at 375.

Serve salmon on bed of dressed arugula with slice of lemon.
