Minestrone (Nonna)

Ingredients

  • 4 potato cut into small cubes

  • 1 onion

  • Celery + celery leaves

  • Garlic

  • bag of mixed frozen California veggies

  • 2 beef bouillon cubes

  • can of chickpeas

  • can of red kidney

  • can of cannellini beans

  • 28oz can crushed/ground tomato

  • white rice

Directions

  1. Add 3/4 cup olive oil to bottom of pot

  2. add sliced potato and cook until soft 5-10 minutes

  3. add sliced onion, celery (including leaves), and garlic and cook for a few minutes

  4. add bag of frozen veggies and 2 bouillon cubes and cook 15-20 minutes

  5. add can of tomato and 3 cans of water bring to a boil and then cook for 1.5 hours

  6. after 1.5 hours add beans

  7. another 30 mins add rice
