Chocolate Chip Almond Cookie

Ingredients

1 cup + 2 tbsp of all purpose flour

1/2 tsp of baking soda

1/3 cup of brown sugar

1/3 cup of granulated sugar

1 1/2 cups of chocolate chips

3/4 cup of sliced almonds

3/4 sweetened coconut flakes (optional)

1/2 cup of salted butter (softened)

1 egg

1 tsp of vanilla extract

Directions

Preheat oven to 350 F

In a small bowl whisk together your flour and baking soda

In a larger bowl blend together your softened butter and sugars

Add your egg and vanilla extract and blend again

Slowly add your dry mixture into your wet mixture and blend

Add in your chocolate chips, coconut (optional) and sliced almonds. Mix together

Roll into balls (I like to use an ice cream scoop to get the same size) and place on a lined baking tray

Bake for 9-11 minutes and let rest for at least 10 mins (take them out as soon as the edges start to golden — note that the middle will still look raw)
