Ingredients

2 lbs yellow potatoes

1 lb golden onions

3/4 cup 00 flour

Salt & pepper to taste

Sunflower oil, for frying

Directions

Grate the potatoes and squeeze out all the liquid using a clean towel.

Slice the onions thin using a mandoline.

Combine potatoes, onions, flour, salt, and pepper in a bowl. Mix into a soft batter.

Heat oil in a skillet. Drop spoonfuls of the mix into the pan and gently flatten.

Fry on low-medium heat for about 3 mins per side until golden and crisp.

Drain on paper towels.

Serve them hot with a chilled glass of Gratsi white and zero intention of sharing!
