Parmesan Garlic Roasted Potatoes

Ingredients

2 lbs red potatoes, cut into 1-inch cubes

2 tbsp olive oil

½ cup grated Parmesan

3 garlic cloves, minced

½ tsp dried oregano

¼ tsp salt

¼ tsp black pepper

Fresh parsley, chopped (for garnish)

Directions

Preheat oven to 400°F and line a baking sheet with parchment or nonstick spray.

In a bowl, toss potatoes with olive oil, Parmesan, garlic, oregano, salt, and pepper.

Spread evenly on the baking sheet.

Roast for 30–35 minutes, until crisp and golden.

Sprinkle with parsley and serve hot.
