Chickpea Chocolate Cookies Gas ⛽️ or Trash

1 can chickpeas
5 tbsp or ~30g unsweetened cocoa powder
1 banana
1 scoop or ~35g chocolate whey protein (@transparentlabs Code ‘MWFIT’ for 10% off)
Can use Pea Protein to keep it vegan
8 pitted noor dates (4-5 medjool dates)
3 tbsp or 20g PB2 powder
1/3 cup or 60g no sugar added dark chocolate chips
1tbsp or ~8g coconut oil (Add in with choc chips)
Directions
Open and drain your chickpeas, then rinse them well before adding them into a blender or food processor.
Add in the banana, cocoa powder, protein powder, dates, PB2, and coconut oil. Blend everything together until you get a smooth cookie dough consistency.
Line a baking tray with parchment paper and scoop out roughly 9 to 10 cookies. Shape them with the back of a spoon since the dough will be soft.
Bake at 350°F for 15 to 20 minutes until the cookies are set around the edges.
Let the cookies cool completely before topping with melted chocolate.
Place them into the fridge or freezer for a few minutes so the chocolate shell hardens up.
