Red Lentil Curry

Ingredients

1.5 cups of red lentil soaked and then cooked separately for 15 minutes (remove excess water before putting it into ur curry)

1 large can of any kind of tomatoes

1 onion

6 cloves of garlic

oil or ghee

couple nubs of fresh ginger

1 cup heavy cream or milk

2 cups veggie broth

1 package of paneer if u want

4 tsp of any indian spice (i did half curry powder half tandoori powder)

some extra cumin for taste if u wanna

Directions

Sauté onions and ghee first, then when transparent add garlic, ginger & spices for a few minutes. Add tomato sauce and cook until it comes up to a boil, then move to a blender to blend.

Add veggie broth and heavy cream and blended sauce back into the pot.

Add in your cooked lentils and cut paneer. Let simmer for 15 min and then eat. that. shit.
