Crunchy kale and quinoa pomegranate salad!! As a dietitian i LOVE finding new ways to make veggies fun and this salad is a GAME CHANGER

½ cup dry quinoa cooked according to package instructions

1 medium sweet potato about 2 cups finely diced

1 medium english cucumber about 2 cups finely diced

½ of 1 medium red onion about 1 cup

3 cups curly kale leaves finely chopped

½ cup flat-leaf parsley

1 tablespoon olive oil divided

2 pomegranates

1 cup feta cheese crumbles

½ cup pumpkin seeds

Creamy balsamic dressing:

½ cup extra virgin olive oil

¼ cup balsamic vinegar

2 cloves garlic pressed

1 tablespoon honey

2 tablespoon plain greek yogurt

Juice of ½ of 1 lemon

1 tablespoon dijon mustard

½ teaspoon salt
