Twice Baked Cauliflower

Ingredients

1 Large Head Cauliflower

4 oz. Cream Cheese

1/2 Cup Sour Cream

1/4 Cup Minced Green Onions

1/4 Cup grated Parmesan Cheese

1 Cup of pre-cooked crumbled bacon (Costco)

1 Cup shredded Cheddar Cheese

Directions

Preheat oven to 375 degrees. Cut out stem and core from Cauliflower, and cut into small pieces. Cook in large pot of boiling water until Cauliflower is tender (but not too tender), about 10 minutes after boiling starts. Drain well and mash with potato masher, leaving some chunks. Mix in cream cheese, then sour cream, green onion, bacon, and Parmesan.

Spread evenly in a medium-sized oven safe casserole dish. Bake 45 minutes until hot and bubbly.

Can be made a day ahead, covered and placed in refrigerator.
