Roasted Garlic and Gruyère Soup

Ingredients

40 cloves of roasted garlic

2 diced carrots

2 diced celery stalks

1 medium onion

2 cans cannellini beans

2 tbs butter

2 sprigs thyme

1 cup milk

1/2 cup white wine

4 cups chicken stock

8 oz Gruyère

Salt and pepper to taste taste

Directions

Sauté veggies, garlic, and thyme in butter for 8-10 minutes. Add wine and to deglaze a d bring up any brown bits. Add milk, stock, and beans. Bring to gentle simmer and then cover and let cook for 20 minutes. Remove thyme stalks and bay leaves (if you try them). Then puree and add 8 oz grated cheese. Paul and I think some texture would be nice. Like a protein or maybe leaving beans unblended.
