Beef Ramen Noodles

1 tbsp. vegetable oil
1 large onion chopped
1 red bell pepper chopped
1/2 head broccoli cut into florets

1 pkg Matchstick carrots
1 lb. ground beef
Salt and pepper to taste
6 oz ramen noodles (2 packets with seasoning packets discarded)
Sauce
1/2 cup soy sauce
1/2 cup brown sugar
1 - 2 tbsp Hoisin
1 tsp sesame oil if desired
3 clove garlic minced
2 cups chicken broth
Sesame seeds
water chestnuts
Directions
1. In a large skillet over medium heat, heat oil. Add onions, peppers, broccoli , and carrots and cook until tender, 5 minutes. Remove from the pan.
2. Add ground beef, season with salt and pepper, and cook until no longer pink, 5 minutes more. Drain fat and return vegetables back to the skillet
3. Make sauce: Whisk together soy sauce, brown sugar, garlic, hoisin, and sesame oil.
4. In a medium saucepan, bring water to a boil. Add ramen noodles and cook until tender, 2 minutes. Drain.
5. Add cooked ramen noodles to skillet and pour over sauce. Toss until completely combined. Top with hamburger mixture. Taste and season with more salt and pepper, if necessary. Add your desired amount of chicken broth. Then garnish with scallions and serve.
Crock Pot Instructions:
Prepare Ground Beef: Brown the ground beef in a skillet over medium heat until cooked through. Drain any excess fat, and transfer the beef to your slow cooker.
Add Vegetables: Layer the carrots, broccoli, red bell pepper, and onions on top.
Make the Sauce:
In a small bowl, whisk together the minced garlic, soy sauce, brown sugar, hoisin, sesame oil and chicken stock. Pour this mixture over the beef and vegetables in the slow cooker. Stir gently to combine.
Cook:
Cover the slow cooker with its lid and cook on low heat for 4-6 hours, allowing the flavors to blend and the vegetables to soften.
Add Noodles:
About 30 minutes before serving, break the ramen noodle into smaller pieces and add them directly to the slow cooker. Stir occasionally to ensure the noodles are submerged and cook evenly.
Serve:
Once the noodles are tender, serve immediately. Garnish with sesame seeds.
